Prep Time 10 minutes Cook Time 8 to 10 minutes Serves 2 people Ingredients Ingredient Quantity Mil8 Health Mix Powder 1 cup Water ½ to ¾ cup, as required Salt As required Grated coconut ½ cup, or as needed Method ① Take Mil8 Health Mix Powder in a wide bowl. ② Add salt to water and mix well. ③ Sprinkle the salted water little by little over the health mix powder. ④ Mix gently with your fingers until the powder becomes moist and crumbly. ⑤ The mixture should not become a dough. It should remain loose, but when pressed in your palm, it should hold shape lightly. ⑥ Rest the mixture for 5 minutes. ⑦ If there are lumps, pulse the mixture once or twice in a mixer grinder. Do not grind continuously. ⑧ Fill the puttu maker by adding grated coconut first, then the health mix mixture, then coconut again in between layers. ⑨ Steam for 5 to 8 minutes, or until steam comes out well from the top of the puttu maker. ⑩ Switch off the flame and carefully push out the puttu. ⑪ Serve hot. This is the most important step for soft puttu. ② Do not make it into dough Puttu mixture should be moist and crumbly, not sticky. ③ Rest before steaming Resting for 5 minutes helps the powder absorb moisture evenly. ④ Use fresh grated coconut This improves softness, aroma, and taste. ⑤ Pulse only if needed Mixer grinding is only to remove lumps. Over-grinding can make the mixture dense. ⑥ For softer puttu After mixing, cover and rest for 10 minutes before steaming. Texture Guide Correct texture: moist, crumbly, soft after steaming. Too dry: puttu will break and feel powdery. Too wet: puttu will become heavy and sticky. If too dry, sprinkle a little more water. If too wet, add a little more Mil8 Health Mix Powder and mix again. A wholesome instant dosa and uttapam recipe made with Mil8 Health Mix Powder, curd, millet rava, onion, green chilli, curry leaves, and ginger. This is a simple way to turn health mix into a tasty breakfast or evening meal for the whole family. It can be made as a thin dosa or a soft uttapam by adjusting the batter consistency. Ingredients Ingredient Quantity Mil8 Health Mix Powder 2 cups Curd ¼ cup Millet rava / regular rava ¼ cup Water 2½ to 3 cups, adjust as needed Onion, finely chopped 1 medium Green chilli, finely chopped 2 Curry leaves, finely chopped 10 leaves Ginger, finely chopped 1 small piece Salt As required Oil / ghee For cooking Optional Additions Ingredient Quantity Grated carrot ¼ cup Chopped coriander leaves 2 tbsp Crushed pepper ¼ tsp Cumin seeds ½ tsp Asafoetida A pinch These additions can improve flavour, colour, and family acceptance, especially for children. Method Batter Preparation ① Take Mil8 Health Mix Powder and millet rava in a mixing bowl. ② Add curd, salt, and 2 cups of water first. Mix well without lumps. ③ Add more water little by little until you get the required batter consistency. ④ Rest the batter for 15 to 20 minutes. This helps the rava absorb water and gives better texture. ⑤ After resting, check the batter again. If it has become thick, add a little water and adjust. ⑥ Add chopped onion, green chilli, curry leaves, ginger, and any optional vegetables. ⑦ Mix well. For Making Dosa ① Heat a dosa tawa on medium flame. ② Grease lightly with oil or ghee. ③ Pour one ladle of batter and spread gently into a thin dosa. ④ Drizzle a little oil around the edges. ⑤ Cook on medium flame until the bottom turns firm and lightly golden. ⑥ Flip only if needed. If the dosa is thin and cooked well, it can also be served without flipping. ⑦ Serve hot with coconut chutney, tomato chutney, sambar, or curd. Batter Consistency for Dosa The batter should be pourable and slightly thinner than regular dosa batter. For Making Uttapam ① Keep the batter slightly thicker than dosa batter. ② Heat a tawa on medium flame and grease lightly. ③ Pour one ladle of batter and spread only slightly. Do not make it too thin. ④ Add extra onion, carrot, coriander, or curry leaves on top if needed. ⑤ Drizzle oil around the sides. ⑥ Cover and cook on low to medium flame for 2 to 3 minutes. ⑦ Flip carefully and cook the other side until done. ⑧ Serve hot. Batter Consistency for Uttapam The batter should be thick, spoonable, and easy to spread lightly. Cooking Tips for Best Results ① Do not skip resting time The rava needs time to absorb moisture. Resting helps the batter bind better. ② Adjust water slowly Health mix powders absorb water differently. Add water gradually instead of adding everything at once. ③ Use medium flame High flame may brown the outside quickly while the inside remains soft. ④ For crisp dosa Make the batter slightly thinner and spread it thin on a hot tawa. ⑤ For soft uttapam Keep the batter thicker and cook covered on low to medium flame. ⑥ For children Reduce green chilli and add grated carrot or finely chopped onion for better taste. ⑦ If dosa breaks Add 1 to 2 tablespoons of rice flour or rava, rest for 10 minutes, and try again. Storage The batter is best used fresh. If needed, it can be refrigerated for up to 1 day. Before using again, mix well and adjust water if the batter becomes thick. Ingredients Ingredient Quantity Mil8 Health Mix Powder 1 cup Moringa leaves ½ cup Fennel seeds, lightly crushed 1 tsp Green chilli, finely chopped 1 Salt As required Water 1 cup Ghee or coconut oil 1 tsp Coconut oil 1 tsp, for kneading Oil For shallow frying Method ① Wash and finely chop the moringa leaves. ② In a kadai, boil 1 cup of water with salt. ③ Add 1 teaspoon of ghee or coconut oil to the boiling water. ④ Keep the flame low and add Mil8 Health Mix Powder little by little while stirring continuously. ⑤ Mix well until the mixture comes together like a soft dough. ⑥ Switch off the stove, cover with a lid, and rest for 3 to 5 minutes. ⑦ Transfer the warm mixture to a bowl. ⑧ Add chopped moringa leaves, crushed fennel seeds, chopped green chilli, and 1 teaspoon coconut oil. ⑨ Knead well while the dough is still warm. ⑩ Make small balls and flatten them into round tikkis. ⑪ Heat a tawa or pan. Add a little oil and cook the tikkis on medium flame. ⑫ Cook both sides until lightly crisp and golden. Tips for Best Results Do not let the dough cool completely before kneading. Warm dough gives better binding. Chop moringa leaves finely so they mix evenly. For children, reduce or avoid green chilli. For a stronger South Indian flavour, add finely chopped onion, curry leaves, and a pinch of asafoetida. If the dough breaks while shaping, sprinkle a little warm water and knead again. Ingredients Ingredient Quantity Mil8 Health Mix Powder 1 cup Rice flour ½ cup Roasted gram flour / besan 2 tbsp Butter 1 tbsp Sesame seeds 1 tbsp Ajwain ½ tsp Red chilli powder ½ tsp, optional Asafoetida A pinch, optional Salt As required Water As required Oil For deep frying Method ① Add Mil8 Health Mix Powder, rice flour, roasted gram flour or besan, sesame seeds, ajwain, salt, and optional chilli powder into a mixing bowl. ② Add butter and mix well with the dry ingredients until the mixture feels slightly crumbly. ③ Add water little by little and knead into a smooth, soft, non-sticky dough. The dough should be soft enough to pass through the murukku mould, but not watery. ④ Grease the murukku mould lightly and fill it with the dough. ⑤ Press the dough into small murukku shapes on a greased plate, parchment sheet, or ladle. ⑥ Heat oil on medium flame. Drop a small piece of dough into the oil. If it rises steadily without burning quickly, the oil is ready. ⑦ Fry the murukku on medium flame until crisp and golden. Turn gently if needed. ⑧ Remove and drain on kitchen paper. Allow it to cool completely before storing. Tips for Best Results Use medium flame throughout frying. High flame may brown the murukku quickly without making it crisp inside. Add water slowly. If the dough becomes too soft, add a little rice flour and adjust. Cool completely before storing, otherwise the murukku may lose crispness. For a spicier version, add red chilli powder or crushed pepper. Storage Store in an airtight container after cooling fully. Best consumed within 7 to 10 days for fresh taste and crispness.
