
A crispy, flavourful millet-based murukku made using Mil8 Health Mix Powder. This is a tasty way to enjoy health mix beyond porridge, especially as an evening snack for the family.

Mil8 Health Mix Powder | 1 cup |
Rice flour | ½ cup |
Roasted gram flour / besan | 2 tbsp |
Butter | 1 tbsp |
Sesame seeds | 1 tbsp |
Ajwain | ½ tsp |
Red chilli powder | ½ tsp, optional |
Asafoetida | A pinch, optional |
Salt | As required |
Water | As required |
Oil | For deep frying |
① Add Mil8 Health Mix Powder, rice flour, roasted gram flour or besan, sesame seeds, ajwain, salt, and optional chilli powder into a mixing bowl.
② Add butter and mix well with the dry ingredients until the mixture feels slightly crumbly.
③ Add water little by little and knead into a smooth, soft, non-sticky dough. The dough should be soft enough to pass through the murukku mould, but not watery.
④ Grease the murukku mould lightly and fill it with the dough.
⑤ Press the dough into small murukku shapes on a greased plate, parchment sheet, or ladle.
⑥ Heat oil on medium flame. Drop a small piece of dough into the oil. If it rises steadily without burning quickly, the oil is ready.
⑦ Fry the murukku on medium flame until crisp and golden. Turn gently if needed.
⑧ Remove and drain on kitchen paper. Allow it to cool completely before storing.
Use medium flame throughout frying. High flame may brown the murukku quickly without making it crisp inside.
Add water slowly. If the dough becomes too soft, add a little rice flour and adjust.
Cool completely before storing, otherwise the murukku may lose crispness.
For a spicier version, add red chilli powder or crushed pepper.
Store in an airtight container after cooling fully. Best consumed within 7 to 10 days for fresh taste and crispness.
